Job Summary:The Food & Beverage Leader in Development will complete a 52-week program that is designed to take an employee through a comprehensive overview of Restaurant, Banquet, Food & Beverage Outlet and Culinary operations, including front-of-house, heart-of-house, and leadership roles. This program is designed to provide compounding responsibilities, while gaining exposure and experiences from other related areas to create a well-rounded leader who is ready to step into a managerial role within Ithaka Hospitality Partners upon completion. This program is designed to provide aspiring leaders with the flexibility to curate a program towards their interests and goals.Supervisory Responsibilities:
  • Assist F&B Managers in overseeing all aspects of daily service, operations, scheduling and staffing.
  • Assist F&B Managers in interviewing, selecting, training, supervising, counseling and disciplining outlet staff.
  • Ensure that the team maintains a positive attitude and complies with all grooming standards daily.
Duties & Responsibilities:
  • Complete training rotations and be able to perform all duties of Host, Server Assistant, Server, Cocktail Server, Bartender, Banquet Set Up, Banquet Server, Audio Visual, etc.
  • Complete training rotations in support outlets to gain exposure to the Culinary, Purchasing & Receiving, Sales, Accounting, Rooms, and TLC operations.
  • Attend designated weekly meetings and complete assigned trainings.
  • Give presentations on assigned topics during Leader's Meetings throughout the program.
Will gain exposure to and assist in executing the following areas in each outlet:
  • Ensure the floor is covered during all operational hours to ensure all steps of service are covered, from warm welcome to fond farewell.
  • Ensure that all steps of services as outlined in training materials are being followed on a daily basis.
  • Ensure that checklists, requisitions, and proper opening and closing functions are being completed each shift.
  • Ensure staffing levels for all outlets are accurate based on hotel and outlet business levels.
  • Organizing and conducting pre-shift and departmental meetings communicating pertinent information to the staff.
  • Communicate with guests and employees using a positive and clear speaking voice, listen to and understand requests, respond with appropriate actions, and provide accurate information.
  • Remain calm and alert, especially during emergency situations and/or heavy hotel activity, serving as a role model for the staff and other hotel employees.
  • Ensure basic standard operating procedures for all outlets are in place and are in compliance with Federal, state, local, and Ithaka's own practices. (eg. ServSafe, Responsible Vendor)
  • Interact positively with customers promoting hotel facilities and services. Resolve problems to the satisfaction of parties involved. Answer telephones in a clear voice, coordinate and document reservations.
  • Maintain rapport with all departments and attend relevant meetings.
  • Maintain cleanliness of outlets on a daily basis.
  • Solicit feedback from guests concerning the service and food & beverage offerings in all outlets.
  • Work closely with F&B leaders in completing monthly beverage inventory and quarterly China/glass/silver/linen inventory.
  • Ensure all daily and monthly reports are detailed and submitted in a timely matter.
  • Performs other related duties as assigned.

Education & Experience:
  • High school diploma or equivalent is required.
  • Bachelor's degree in Hospitality is preferred.
  • Supervisory experience is preferred.
Physical Requirements:
  • Must be able to lift up to 30 pounds at times.
  • Prolonged periods of walking, standing, and sitting.
  • Must be legal drinking age or older.
