We are seeking a highly skilled and passionate Sushi Bar Manager to join our dynamic culinary team. This role is integral to the success of our sushi bar, requiring extensive experience in Japanese cuisine, exceptional knife skills, and strong leadership abilities. The ideal candidate will help lead day-to-day operations, uphold culinary excellence, and create an exceptional guest experience.Key Responsibilities:
● Prepare and execute high-quality Japanese cold dishes including sushi, sashimi, crudo,
● tartare, and salads
● Oversee and participate in daily fish cutting, cleaning, and portioning.
● Prepare fresh vegetables, garnishes, and sauces to accompany dishes.
● Ensure consistency, quality, and visual appeal of all sushi bar offerings.
● Assist the Executive Chef in workflow management, ticket execution, and maintaining smooth kitchen operations.
● Mentor and supervise sushi rollers, upholding high standards of cleanliness, preparation, and plating.
● Collaborate on inventory management, ordering, and cost control.
● Participate in team meetings and contribute to menu development and innovation.
● Maintain compliance with Washington State health and safety standards.
● Interact with guests at the sushi bar, providing a polished, knowledgeable, and engaging experienceQualifications:
● Minimum 5 years of professional sushi bar experience in a high-volume or fine dining setting.
● Expert knife skills
● Proven ability to lead and train kitchen staff with professionalism and composure.
● Deep understanding of Japanese ingredients, seasonal fish, and presentation aesthetics.
● Strong organizational, multitasking, and communication skills.
● Must thrive in a fast-paced, high-pressure environment while maintaining attention to detail.
● Flexible availability, including weekends and holidays.
