- Oversees operation of Food & Beverages Departments for Parks and Resorts operations, provides operational oversight and support to all properties.
- Manages the P&L delivery of the operations, analyzes the business and acts on variances in a timely, pragmatic and programmed fashion.
- Drives and manages Xanterra’s Strategic F&B Plan and Operational Pillars through planning and performance initiatives, standards and guidelines, and closes gaps on opportunities and focus areas. Works closely with corporate and field operations teams in their partnership and achievement.
- Creates an analytics culture in F&B. Develops and drives metrics systems and tools for standardization across our properties; including food prep & quality, financial, compliance, staffing, training, guest and employee satisfaction initiatives are in place and supported throughout all operations.
- Helps drive the annual budgeting process for F&B outlets, using analytics, industry and anecdotal insights to guide the process.
- Participates directly in concept creation and menu development for all food & beverage outlets for existing contracts, new contracts, bid development and any acquired outlets.
- Engages with corporate and field Supply Chain/Purchasing teams focusing on product planning & sourcing, ensuring menu optimization and profitability.
- Manages a programmed menu approach across a spectrum of service styles, including alignment with enterprise purchasing programs, managing core and non-core items for maximum profitability.
- Introduces and promotes consistent service and food production standards and measurements across all guest-facing, employee-facing, and culinary operations.
- Manages operational changes through Guest Service scores and feedback; drives a culture of excellence in guest service utilizing data generated through digital platforms.
- Ensures Employee Dining operations Options are best in class and assumes the role of Employee Ambassador for Culinary Excellence, promoting employee satisfaction scores in EDR’s.
- Manages new-build design, retrofits, equipment placement and replacement programs, and oversees planning for all major capital projects in the F&B space.
- Reviews, proposes new ways to leverage current and future technologies to improve efficiency and effectiveness.
- Ensures training and development materials and programs for front of house and back of house teams are available and are effective in improving both guest and employee experiences.
- Introduces new programs to build Culinary & F&B Management expertise and retain talent.
- Drives a culture of Food Safety excellence throughout Parks and Gateway enterprise operations in collaboration with field operations teams, health departments and Xanterra’s Corporate Manager of Public Health.
- Involved directly in interview processes prioritizing the hiring of top talent for culinary and front-of-house leadership positions in field operations. Qualifications:
- Bachelor’s Degree in Hotel & Restaurant Management, Hospitality Management, Culinary Management or a related Business Degree.
- At least ten years of executive level Food and Beverage management experience in the Resort/Hotel and/or Concessions industry.
- Preferred experience includes managing over $100M in volume and 50+ Outlets previously, multi-area.
- Requires solid Financial and administrative background with excellent time management and problem resolution skills.
- Excellent hospitality experience in building, developing and implementing new and creative Food & Beverage concepts and experiences.
- Excellent track record of developing and implementing property-wide, scalable strategies.
