- A certified food service manager; or
- Has similar national certification for food service management and safety from a national certifying body; or
- Has an associate's or higher degree in food service management or in hospitality, if the course study includes food service or restaurant management, from an accredited institution of higher learning
- Must have training in cost control, food management, diet therapy, etc.
- Coordinate dietary services and activities with other related departments (i.e., Nursing, Housekeeping, Social Services, Meadow Wood, Forest Glen, Shepherd's Inn and Child Care, etc.).
- Develop and maintain written dietary policies and procedures.
- In coordination with HR, develop and maintain written job descriptions and performance evaluations for each level of dietary personnel.
- Interpret the department's policies and procedures to employees, residents, visitors, government agencies, etc., as necessary.
- Assist the dietary staff in the development and use of departmental policies, procedures, equipment, supplies, etc.
- Perform administrative duties such as completing necessary forms, reports, evaluations, studies, etc., to assure control of equipment and supplies.
- Develop and maintain a file of tested standard recipes.
- Submit accident/incident reports to HR immediately, no later than twenty-four (24) hours after their occurrence.
- Assume authority, responsibility, and accountability of supervising the Dietary Department.
- Inspect food storage rooms, utility/janitorial closets, etc., for upkeep and supply control.
- Review and assist in developing a plan of correction for dietary service deficiencies noted during survey inspections and provide a written copy of such to the NHA.
- Process diet changes and new diets as received from nursing services.
