We are seeking a highly skilled and dedicated Sushi Chef specializing in Nigiri and Sashimi to join our sushi team. This role is crucial to delivering a premium Japanese dining experience, requiring expert knife skills, deep product knowledge, and a commitment to precision and artistry. The ideal candidate is passionate about traditional techniques, has a refined sense of taste and presentation, and thrives in a fast-paced, high-standard kitchen environment.Key Responsibilities:
● Prepare traditional and modern nigiri and sashimi with precision, speed, and artistry.
● Break down, clean, and portion whole fish with expertise and care.
● Maintain strict control over fish quality, freshness, and inventory rotation (FIFO).
● Ensure all plates are presented with clean, precise cuts and proper garnishes.
● Work closely with the Sushi Bar Manager and team to ensure smooth and efficient service.
● Assist in daily prep, including butchering, marinating, seasoning, and sauce making.
● Adhere to and uphold the highest standards of sanitation and food safety protocols, in accordance with state and local health codes.
● Educate and mentor junior team members in proper techniques and station maintenance.
● Interact with guests at the sushi bar when appropriate, offering insight and hospitality.Qualifications:
● Minimum 4 years of hands-on experience preparing nigiri and sashimi in a professional sushi kitchen.
● Deep knowledge of seasonal fish, sourcing, and traditional Japanese preparation techniques.
● Mastery of knife handling, fish fabrication, and precision slicing.
● Strong attention to detail, flavor balance, and plating aesthetics.
● Ability to work calmly and efficiently in a high-pressure, fast-paced environment.
● Clear communication and collaboration skills within a kitchen team.
● Familiarity with seafood safety regulations.
