Join our team in its dedication to be the leading destination for gaming and hospitality on the beautiful, southern Oregon coast!BASIC FUNCTION (the primary purpose of this position):Manages physical production of foods and supervises all kitchen Banquet personnel.PRINCIPAL ACTIVITIES & RESPONSIBILITIES:
  • Promote a clean, safe, healthy and friendly work environment for employees and guests; report and direct safety issues to Safety Committee / Chef.
  • Performs culinary preparatory cooking methods in preparation for events and catered functions.
  • Attends catering meeting and provides feedback and strategies on events.
  • Provides F&B purchasing department with weekly orders and transfers for all upcoming events.
  • Provides specialty menus and pricing for sales department as needed.
  • Schedules personnel based on production requirements.
  • Conducts subordinate evaluations based on performance standards as prescribed by job descriptions.
  • Must be knowledgeable enough to function as leader in all aspects of the Mill main kitchen operations.
  • Employs fair practices in dealing with subordinates and peers to instill team effort and good workplace morale.
  • Interacts with all kitchen and bakery employees to achieve prescribed cost control measures and production levels.
  • Trains employees to fulfill company goals for specific jobs and maintains rigid sanitation standards in the facility.
  • Other duties as assigned.
POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience):
  • Five years progressive working kitchen experience, with at least one year in a mid-management capacity associated with a full-service restaurant with average food sales in excess of $1.5 million annually.
  • Applicants with a degree in culinary arts will be preferred.
  • ServeSafe certification required or must have the ability to become certified within 90 days of employment.
  • Must have supervised at a minimum a staff of ten people for one year.
  • Demonstrated ability to work with a minimum of supervision.
  • Must pass and remain in compliance with Coquille Gaming Commission background check and drug free workplace policies

While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls. Ability to lift up to 50 lbs. frequently. Occasionally sit. Ability to manage stress appropriately, make decisions under pressure, manages anger, fear, hostility and violence of others appropriately.
