- Provides technical expertise in operational menu planning for regular, therapeutic, religious, holiday/seasonal needs. Requires an understanding of current applicable nutrition-related government regulations and current nutrition research knowledge for application to meet client needs. Considerations include balancing budgetary restraints with nutritional requirements and client specifications.
- Assists in the implementation of the Quality Assurance operating standards, in conjunction with Operations, to assure contract compliance standard, client food and nutrition services policies and protocols, and American Correctional Association (ACA) accreditation.
- Provides support in the execution of ACS operational standards, including food cost targets and execution through assistance in the development of tools and training. Interacts with Front Line Managers regularly to provide them the needed tools and information, including on-site visits.
- Provides support related to Supply Chain Management (SCM). Acts as the liaison to the field operators and SCM for procurement and distribution. Supports the execution of processes to ensure compliance with purchasing programs. Assists in the testing of products and input as needed to determine appropriate product usage.
- Utilizes operational food production software system designed for ACS to assure contractual compliance with standards. Accurately computes all nutritional and menu costs as well as on-going menu revisions to meet client needs. Assists to ensure appropriate execution of program within accounts.
- Develops tools and training to assist operations in the areas of nutrition and operational support, quality assurance, and food cost control. Works with leadership team to design and deliver necessary program content as appropriate.
- Develops a strong level of trust and credibility with clients and the field regarding the technical nutritional competency of Aramark Correctional Services. Maintains excellent working relationship with clients.
- Maintains administrative functions as needed, including word processing and assembly of field tools.
- Demonstrates flexibility to support periodic time-sensitive business needs outside the scope of a standard working day or week; up to 25% travel expected
- Completed bachelor's degree and course work accredited or approved by the Accreditation Council for Education in Nutrition and Dietetics (ACEND) of the Academy of Nutrition and Dietetics.
- Registered Dietitian with Commission on Dietetic Registration (CDR): Successful completion of internship program (ACEND), satisfactory score on an exam, plus fulfillment of continuing education requirements). Open to consideration of those eligible to sit for exam.
- Dietetic license held within central region, with a minimum of two years experience.
- Food service operations management experience required and must be ServSafe certified.
- Ability to accurately and efficiently utilize a food production software system & electronic medical record system.
- Ability to build relationships, communicate effectively with clients, front line managers, sales, operations and support staff.
- Valid driver's license required.
