- Provide professional dietetic consultation in accordance with State and Federal regulations.
- Review dietary files to assure maintenance of required records, i.e., menus, cost reports, work schedules, in-service records, etc.
- Review, update as needed, and sign the facility’s diet manual and policy and procedure manual on an annual basis.
- Complete nutritional assessments and progress notes as required by federal and state regulation.
- Follow Company policy and standards of practice when addressing situations relating to withholding of food and fluid.
- Contribute pertinent information to resident care plans and participate in resident care plan meetings.
- Counsel residents and their families concerning regular and/or therapeutic diets and interpreting the needs for such diets.
- Process diet changes and new diets as received from Nursing Services and assist in the discharge planning process as appropriate.
- Evaluate and implement recommendations from the facility’s committees, i.e.: quality improvement, utilization review, pharmacy, infection control, Corporate Compliance, etc.
- Monitor supervision of work and food handling techniques of all dietary personnel and accuracy of meals served.
- Assist Dietary Supervisor in developing written plans for in-service training and assist in that training.
- Monitor food temperatures and food quality at the point of production, in the dining room, lounges and resident rooms via test trays.
- Assume the authority, responsibility, and accountability of directing the food service department in the absence of the Dietary Supervisor when necessary.
- Review the charting of the Clinical Dietetic Technician to ensure timeliness, thoroughness, and accuracy.
- Assess and make recommendations to the Administrator regarding supplies, equipment purchases, safety and sanitation.
- Assess and make recommendations to the Administrator regarding the efficiency of workflow in the kitchen.
- Review recommendations of speech therapist to ensure consistency and quality of service provided to the resident.
- Must possess a baccalaureate degree in Dietetics or related field.
- Must be a Registered Dietician and maintain a current license as required by State Law..
- Must show the ability to communicate effectively.
- Must be able to read and write in English, in a legible and understandable manner.
- At least one year of clinical experience in a hospital, skilled nursing care facility or other related medical facility.
- Working knowledge of nursing home regulations.
- Genuine caring for and interest in the elderly, and physically and mentally challenged people.
- Ability to relate positively to residents, their families, employees and the community at large.
- Must meet all federal, state and local health regulations and pass a post-employment physical exam. This requirement includes drug screening, criminal background investigation, and reference inquiries.
